Sandwich Filling: Tuna, Red Onion & Mayo

Finely chop the red onion and slice the cucumber

Drain the canned tuna and empty into a medium bowl and add the onion, mayonnaise and lemon juice. Season well with salt and pepper. Stir to combine until the red onion and mayonnaise are incorporated.

Butter the slices of bread and divide the filling between two sandwiches. Add the cucumber slices, season with pepper and top with a second slice of bread. Cut in half to serve. Repeat with the second sandwich.
