Donal's Notes

These flapjacks are great for on-the-go snacks. You can use up all your store cupboard dried fruit and seeds. Best of all they’ll keep in a glass jar for a while but you’ll have  them all eaten by then!

SERVES 16
20 x 30cm tin
Baking parchment
Saucepan
Cutting knife
Wooden spoon

Instructions

1
Heat the oven to 190C, fan 170C, gas mark 5. Grease a baking tin with butter then line with parchment paper.
2

Melt the unsalted butter, soft brown sugar, golden syrup and salt in a saucepan set over a medium heat. Stir well to combine then take off the heat.

3

In a bowl, add the quick-cook oats, mixed seeds and dried blueberries or raisins.

4

Add the mixture to the dry ingredients and press into the tin and bake for 25 minutes.

5

While the flapjacks are still soft, use a knife to divide into 16. Allow to cool completely in the tin.
