Laksa is a noodle soup popular across South East Asia. You will find laksa paste in any Asian supermarket. This is what makes this a little cheat recipe! If you can’t find it, opt for Thai red curry paste instead.
Place a wok over a medium–high heat and add the oil. Oncehot, add the laksa paste and fry for a minute before pouringin the stock and coconut milk. Bring to the boil then add thechicken breasts.
Simmer for 10 minutes, remove the cooked chicken and thinlyslice before adding it back to the wok, then add the noodles andprawns and cook for a few minutes more until the prawns arepink and the noodles are soft and heated through.
Serve in deep bowls garnished with bean sprouts, soft-boiledegg halves, herbs, chilli and lime wedges.
