Cheat's Chicken Laksa

  • Place a wok over a medium–high heat and add the oil. Oncehot, add the laksa paste and fry for a minute before pouringin the stock and coconut milk. Bring to the boil then add thechicken breasts.
  • Simmer for 10 minutes, remove the cooked chicken and thinlyslice before adding it back to the wok, then add the noodles andprawns and cook for a few minutes more until the prawns arepink and the noodles are soft and heated through.
  • Serve in deep bowls garnished with bean sprouts, soft-boiledegg halves, herbs, chilli and lime wedges.

Notes

Laksa is a noodle soup popular across South East Asia. You will find laksa paste in any Asian supermarket. This is what makes this a little cheat recipe! If you can't find it, opt for Thai red curry paste instead.
